A simple and express spectrophotometric technique for simultaneous determination of ascorbic acid and nitrite,ions by means of one substance – heteropoly anion 18,molybdodiphosphate (Р2Мо18О626,)  is developed. The technique is based on use of the oxidized form of heteropoly anion for determination of ascorbic acid, and reduced – for determination of NO2, . The technique is approved on samples of meat products and characterized by sufficient sensitivity, sharp selectivity and accuracy (Sr does not exceed 3 %).
