AUTHENTICATION AND DETERMINATION OF TRANS,IZOMERS OF FAT ACIDS IN BUTTER,FATTY INDUSTRY (REVIEW).

The methods of authentication and determination trans-izomers of fat acids in butter-fatty products were considered. Ukrainian market has a significant amount of counterfeit products. With Ukraine's accession to WTO special place, issues of food chemistry, especially food quality control and certification. The lack of standards of Ukraine (DSTU) on many fronts, makes analytical chemists, hygienists, toxicologists develop new techniques like ISO,1900,2000. Most often rigged exposed dairy products (butter, cream, sour cream, cheese, condensed and powdered milk, ice cream, etc.). Practice shows that in order to disguise the most commonly used hydrogenation of vegetable fats or mixed with other oils.
